Risotto is an Italian creamy rice dish…there are many, many rice recipes. The 5 recipes we have chosen to include in this blog post are made with arborio, brown rice and Venere rice (black Venus rice).
1) ITALIAN SAFFRON RICE
The Italian saffron rice (or risotto alla milanese) is one of the most typical Italian risotto. The delicate flavour of saffron makes this recipe one of the most appreciated of the Northern Italian cuisine. A creamy and delicious risotto you can share with your family during a Sunday lunch! The best and high-quality saffron grows here in Abruzzo (Piana di Navelli).
2) ASPARAGUS & SHRIMPS RISOTTO
CLABIT has its office with a view of the beach (yes, we are very lucky!) which inspired the next recipe. You need these ingredients: shrimps, asparagus, one lemon and brown rice. Cook the shimps and the asparagus. The risotto is done when the rice is al dente and suspended in a creamy sauce. Add some grated lemon on it. A summer smell around the room!
3) MUSHROOMS & ZUCCHINI RISOTTO
Some days ago our nephew visited our office and stayed with us at lunchtime. In order to be the best aunt and uncle, we decided to make mushrooms and zucchini risotto – a family and kids recipe! Mushrooms and zucchini come from the small vegetable garden of some friends. a genuine dish for our little boy.
We cut the vegetables into small pieces and cooked in a saucepan with olive oil. When the rice was done, we add soft cheese to make the risotto extremely creamy…our 3-year-old nephew loves cheese!
We used his soup plate to enjoy this tasty recipe. He eats only with his personalised plate with little and colourful birds!
4) SEAFOOD RISOTTO
As we told you, the view of the beach inspires our lunch dishes. Here in Pescara there a lot of restaurants where you can taste the typical cuisine of our Region.
The seafood risotto is a traditional and tasty recipe, ideal during summer. Cook the seafood in a saucepan. The risotto is done when the rice is al dente and suspended in a creamy sauce. If you want a strong taste, you can add some small pieces of chili pepper (we call it peperoncino).
5) STRAWBERRIES & FETA CHEESE RISOTTO
If you are always on the lookout for new ingredients, you’ll love this recipe. You need: strawberries, feta cheese and the Venere rice. Cut the strawberries into small pieces and cooked in a saucepan with olive oil. When the risotto is done, you can add toasted pine nuts and three orange slices to decorate your plate.
